Breastfeeding Friendly Cookies

If you’re like me and your bub is a little fussy about what you eat while your breastfeeding and their gut is maturing. Or if you enjoy a good gluten-free and dairy-free wholesome cookie, this is for you. This recipe is adapted from @jordiepieface

Ingredients:

1.5 cups almond flour

3T white rice flour

1/3 cup maple syrup or honey

1/2tsp cinnamon

handful of chocolate chips (as @jordiepieface says, measure with your heart)

2T protein powder (I love using a plant-based vanilla protein)

1T chia seeds

1/4 C coconut oil

pinch of salt

Method:

  1. Preheat the oven to 180 degrees celcius and get your baking tray ready

  2. Mix all ingredients together in a bowl until a dough is formed

  3. Roll the dough into around 10 cookies (depending on how big you like them), place on the baking tray and then gently press into a cookie shape.

  4. Bake for about 15 minutes in the oven (you’ll know when they’re ready as your house will smell delicious!)

  5. Remove from the oven and place on a drying rack to cool. Best eaten warm fresh from the oven :)
